Banana Apple Spice Muffins

Yeah, it might sound a little icky, but don't knock it till ya try em! Also, I did come up with this recipe so if it's gross, then I blame you for forgetting an ingredient.

I would never consider myself a great cook, much less good, but I've got the basics down. Put a little of this, add an egg to make it bake or whatever you call that, and poof, you have something semi-edible.
Bored in the house and I'm in the house bored. That was me today. Very "on-trend" with the almost over quarantine vibe. I had some ripe bananas [that I did not want to go to waste] sitting on the counter. What better way to put them to use than to make some hopefully yummy muffins for an easy breakfast grab this week.
Whenever I bake or cook or burn things, I first check what needs to be used in the cabinet and what I have on hand. I've officially become an adult. I had on hand all the ingredients to sum up some almost healthy muffins! I'm pretty sure you could also stick this batter in a loaf pan and call it a day if your into bread instead.
ANYWAYS...Here are the ingredients:
3 ripe bananas
1 c flour (I used buckwheat)
1 c rolled oats
1 tsp baking soda
1/4 c honey (I used orange blossom, get crazy with the flavors if ya want)
1/2 tsp nutmeg
2 tsp cinnamon (which was debatably too much)
1/2 c coconut oil (use butter or veg. oil if you need a sub)
splash of vanilla
dash of salt
1 apple (if ya want to get fancy)
Again, I'm not a chef by any means so I really just threw the ingredients into my Kitchen Aid. To get you on the right track with this, mash your bananas. Once mashed, mix in your nutmeg and cinnamon followed by coconut oil or which ever fat you choose. Continue adding ingredients one at a time. I did a really good job of having my mixer setting too high, adding in the flour and oats...I'm still cleaning up my counter tops.

After the coconut oil is added, I followed with the flour, oats and baking soda. I should really start measuring things!!! I added a tablespoon-ish of vanilla after that, go wild if ya want, or stay on the safe side with 1/2 a tablespoon.
I used to bake often with my grandmother growing up. I can remember the first pie we ever made. I'm almost positive it had to of tasted bad, but my grandmother was one of a kind. Especially in the kitchen. She made sure us kids did most things on our own [with her help] to know we learned along the way. Anyways, she would always say things like "add a dash of salt". I'd add what I thought was a dash, and turn to her for the assurance that what I added was in fact, a dash. With my rant being over, this is where you add your "dash" of salt.
Place your batter into your muffin tin...I like filling mine up almost to the top, more for breakfast! Grab your apple and cut very thin slices. You'll want cuts thin enough to allow bend without snapping the slices in half. Take your slices and place them into a flower like formation in each individual tin (as pictured below). I made some with apples and some without...both turned out delicious!

Bake for 25 - 30 minutes at 350 degrees, checking them every so often to ensure you don't over bake these bad boys. I did not do this, but you could always add a delicious streusel topping for a more kid friendly, sugary crunch! Cheesy disclaimer: Add a good amount of love to ensure the best flavor for whoever you choose to share these with!
